I’ve been travelling for more than 30 years, and most hotels are nice without being memorable. Every so often one has a real wow factor: the setting, the staff, a room you don’t want to leave. Every room is decorated differently, mixing Venetian tradition with Arab and African furnishings, and each has a king-size bed and either a spa bath or a waterfall shower. Guests must be over 16, so it stays calm.

Wander the Grande Île to the cathedral, follow the canals through Petite France, and come back for breakfast. Pets are welcome too.

I loved my stay at Quai des Pontis, on the banks of the Charente River in the heart of Cognac. You choose your own kind of room: bedrooms and suites, lodges, over-the-top decorated wooden caravans, or a cabin with its own balcony or terrace.
I stayed in a cabin by the water and felt like I had my own hideaway in the middle of nowhere, not minutes from the centre of town. There’s an outdoor pool for summer, and the cognac houses are close enough for an afternoon tasting.

It’s adults-only, with three pools, a spa and its own private beach, and it’s incredible value for this level of luxury. Hike on the slopes of Mount Olympus in the morning and be back on a sun lounger by lunch.

17. MYRIAD by SANA Hotels in Lisbon, Portugal
MYRIAD by SANA stands beside the Vasco da Gama Tower, the tallest in Portugal, with a sail-shaped design on the banks of the Tagus River. Every room and suite has a panoramic view over the river or Parque das Nações.

The spa covers 2,800 m², with a heated indoor pool, saunas and steam baths, and there are two award-winning restaurants. Book a massage after a day of hiking or skiing in the Engadine. Muottas Muragl is not to be missed: in my opinion it has some of the best hiking in Europe.

20. Aqua Dome Hotel & Tirol Therme Längenfeld in the Ötztal Valley, Austria
This is one of my favourite hotels in Europe because it’s so romantic. When I stayed, the three futuristic bowls that seem to float outside the spa became a moonlight bath on Friday night, and naturally we tried all three: the whirl bowl, the sulphur bowl and the brine bowl, my favourite, with music and lights under the water.

21. Falkensteiner Hotel & Spa Carinzia in Tröpolach, Austria
I stayed at the Falkensteiner Carinzia in summer, but it’s busiest in winter, when the Millennium Express cable car a few steps away takes you up to the slopes. Come here to get away from it all in the wellness area, or to play hard on the mountain.
In summer, ride the summer toboggan run or test your balance in the climbing forest, then relax. The 2,400 m² spa has indoor and outdoor pools and an outdoor hot tub, and that pool with the mountain views was the highlight of my stay. The Austrian Alps are an adventure lover’s paradise, so it suits couples whose idea of romance includes getting outdoors.
